Cranberry Sauce and Paleo Cranberry-Pumpkin Loaf

Paleo Cranberry-Pumpkin Loaf (Plus Sugar-Free Cranberry Sauce!)

One thing I always really enjoyed about Thanksgiving was all the great leftovers from Thanksgiving dinner.  Here are two recipes in one; cranberry sauce for the day itself, and a cranberry-pumpkin loaf to greet you on Friday morning, and – since it’s paleo – there’s no wheat or added sugar! (I took pictures so you could see the different steps of the recipe.)

Ingredients:

Cranberry sauce:

2 twelve-oz. bags of fresh or frozen cranberries (unsweetened)

2 cups of Splenda ® (or some other granulated sugar-substitute)

2 cups of water

2-0.25 oz. envelopes of unflavored gelatin

Cranberry-Pumpkin Loaf

3 cups of almond meal

1 tsp. of salt

1 tsp. of baking soda

2 tsp. of cinnamon

1 tsp. of nutmeg

¼ tsp. of stevia powder

2 Tbsp. of Splenda ® (or some other granulated sugar-substitute)

one 15-oz. can of pumpkin

1 ½ cups of cranberry sauce (or more if you want)

9 eggs

Directions:

Cranberry sauce:

Put the water in a saucepan and put the heat on medium.  Dissolve the Splenda ® and gelatin in the water.

Rinse the cranberries.

Once the water boils, add the cranberries and return the mixture to a boil, stirring frequently.

Boil gently for about ten minutes, stirring frequently.  Eventually, the cranberries should split and begin to fall apart, and the sauce should thicken slightly.

Refrigerate the cranberry sauce for three hours, or until the gelatin sets.

Makes about 4 ½ cups.  Please note that the texture is less solid than regular cranberry sauce.

Cranberry-Pumpkin Loaf

Mix the almond meal, salt, baking soda, cinnamon, nutmeg, stevia, and Splenda ® in a large bowl.  These are the dry ingredients.

Mix the pumpkin, cranberry sauce, and eggs together in a bowl.  These are the wet ingredients.

Mix the wet ingredients into the dry ingredients.

Spoon the batter into three greased 5×10 in. loaf pans.

Bake at 3500 for 35-45 minutes.

Makes three 5×10 in. loaves.

These cranberry-pumpkin loaves can be served with butter, cream cheese, or more cranberry sauce.  You could also vary the recipe by adding nuts or chocolate chips, or substituting some other fruit for the cranberries.
